Under Weight Chickens?

I'm probably worrying about nothing, but I weighed my chickens and they are at least 25% under the weight that My Pet Çhicken and several hatchery websites list as their full grown weight. The two Australorps are a little over a year old, the other two just under a year.

The Black Australorps are just about 4.5 pounds, all sites say should be 6-8lbs.
The Silver Laced Wyandotte is about the same and should be 6-8 lbs. too
The Easter Egger is smaller at 4lbs 2oz. she should be 5.5 -7 according to the sites.

They get H&B Organic Layer Crumble in their always full hopper. Free choice oyster shell, free range of the yard, which includes a series of unavoidable steps. I throw out a bit of scratch or cracked corn every day. They get kitchen scraps, although they're very picky about those.

No sign of worms and I worm them with Verm-X once every couple of months. I use DE and they appear parasite free.

They're laying well, The Easter Egger averaging 5.7 eggs/week, the Wyandotte 5.6, one Australorp 5 & the last one 4.5/week.

I guess the stairs are their version of exercise and keeping them trim?
